Hey, Maren. Vodka sauce recipes have been around since the dark
ages (almost) and there must be 7 gazillion variations. Basically
it is a tomato-based pasta sauce laced with vodka. I've also seen
it served over chicken, etc.

However, I really think it is a waste of vodka! 

My favorite "vodka sauce" is 1 part vodka, 2 parts gin, 1 part dry
vermouth stirred (not shaken) in ice, then poured into a chilled
glass with a lemon twist and green olive. 'Tis called a martini.

Maren, where have you been? Vodka sauce is tomato sauce with about
a cup of vodka in it, along with some cream and herbs. It's quite
delicious and is served in every Italian restaurant in America as
"penne alla vodka". Easy to make at home, better than jarred.

So many responses...  the one from Jeanie WALSH ('63) is the best.

Here are a few that were sent to me personally (not to the Sandstorm):

  1. It is an Italian sauce made with tomatoes (some times cream
is added) and it is used on pasta. Check "Allrecipies" and they
have several uses for it.

  2. Vodka sauce is a creamy version of a type of marinara and is
great on pasta. Try it, you'll like it!

  3. Yep, I've heard of 'Vodka Sauce', but never tried it. You 
can use it in any receipt that call for pasta sauce, especially
chicken. Darned 'puter won't let me send to the Sandstorm today,
so I used your address.

  4. Vodka sauce is just a yummy tomato pasta sauce. Better with
penne pasta rather than spaghetti. Here's an easy recipe = Add 
one cup vodka to a large jar of marinara sauce and simmer for 30
minutes; then add 1/2 cup heavy cream and heat through, then stir
in 1/2 cup grated Parmesan until melted and smooth. Add 1 pound
cooked penne, and top with more Parmesan.

  5. Well make it and see if you like it!! Then let us know how it
tastes!! BOMBERS RULE!

Good thing I bought some when I saw it on the grocery store 
shelf... I don't drink enough to have any vodka readily available.

Maren, Vodka sauce is one of my family's very favorite pasta
sauces. I make it all of the time and it's delicious, we lived in
Rome for 3 years and this recipe is one to 'die for'. I often
serve it at dinner parties, and it's always devoured... and yes,
it has ½ cup of vodka in it 

    [I think the  off-the-shelf version that I bought does NOT 
     have real vodka in it... How yummy can it be?  -Maren]

Marinara. However, I would recommend Monjuni's Pomodori.

Maren, Pittsburgh has a number of eateries that serve a vodka
sauce. Just make a good marinara sauce and add in cream and vodka
to taste. Makes a nice pink colored sauce for pasta. Half a cup of
vodka in a pot of sauce to maybe a cup. Half n half or heavy cream
till the red is pink. Serve over penne, rigatoni, etc. Mix in some
nice sweet and hot sausage and change your name to Vinny.
